Spicy Chilli Mussels with Saint Phillip

Spice up your seafood game with this quick and easy chilli mussel recipe! Fresh mussels cooked in a spicy broth using our Saint Phillip.This dish is perfect for sharing with friends and family. Ready in under 30 minutes, serve with crusty bread for the ultimate feast!

Ingredients
1 Tbsp Olive oil 
1 Tbsp Unsalted Butter 
1/2 Shallot, Finely Chopped
1 Cup Streaky Bacon, Diced (4-5 Slices)
2 tsp Garlic, Finely Diced
1/2 Red Capsicum, Chopped
3 Tbsp Saint Phillip Roasted Capsicum & Chilli
1 Cup, Crushed Tomatoes
1/2 cup White Wine 
Salt and Pepper
1.5- 2 Kgs Green Lipped Mussels, Cleaned & De-bearded 
Handful Parsley, Chopped
Lemon wedges
Baguette Slices, Toasted

 

Method
Heat the olive oil and butter in a large pot, then add the shallot and bacon, stirring occasionally, until the shallot is translucent and bacon is crispy, about 5 minutes. Next add the garlic and capsicum, stirring into the bacon and shallot, cooking for a couple of minutes before adding the wine, tomatoes, and St Phillip. Bring the sauce to a simmer.                                                              

Pour the mussels into the pot and stir through the sauce. Cover and cook until the mussels start to open, around 4 to 5 minutes, discarding any that do not open. Stir in half your parsley, lightly toss, then spoon into a big bowl. Family Style. Garnish with the remaining parsley and lemon wedges. Serve with toasted bread and tuck in.
