It’s time to reluctantly say “Goodbye” to Summer. The days will slowly become shorter as we long to bundle up and settle in. This means it’s the last chance to make the most of the summer produce.
So pull out the BBQ for one last dance, and grill up some corn on the cob, simply drizzled with St Valentine Lavender & Rosemary Hot Honey.
Ingredients

4 cobs corn, in husks

Brine, 3 tbsp salt to 3l water

2-4 Tbsp St Valentine hot honey

freshly cracked black pepper

Parmesan cheese, optional

coriander, optional
Directions
Mix up enough brine to completely cover the corn in their husks. Soak in a bowl, weighted down, for 40-60 minutes.
On a sizzling hot BBQ, or under the grill, steam the corn, still in their husks for 6-8 minutes, turning every 2 minutes. Take off the BBQ and cool until you can touch them, remove the husks and any stringy bits.
Serve them whole or cut into chunks, drizzled with the hot honey, and a fine grating of parmesan cheese and chopped coriander (if using). Season generously with pepper.
