A fun twist on the Tex-Mex dish that is Mac’n’Cheese.

Instead of adding a Jalapeño chilli kick to give it a Mexican vibe, I’ve added our Chocolate & Manuka Chipotle sauce, for those Mexican mole chilli flavours and sweet corn for an added burst of yumminess.

St Matthew & Corn Mac'n’Cheese

Ingredients

  • 300g macaroni dried pasta

  • pinch of salt

  • 1 Tbsp olive oil

  • 100g butter (split 10g/30g/70g)

  • 1 small onion, finely diced

  • sea salt & freshly ground black pepper

  • 2 Tbsp St Matthew Chocolate & Manuka Chipotle

  • 150g frozen corn kernels

  • 50g cream cheese or sour cream

  • 100g plain flour

  • 650ml milk

  • 200g Colby or Mild cheese, grated

  • 100g mozzarella, grated

  • 40g panko crumbs

  • Handful flatleaf parsley, roughly chopped

Directions

  1. Preheat the oven to 180°C fan.

  2. Boil the macaroni, to the packets directions, with a pinch of salt. Drain, and set aside in an oven safe dish to cool.

  3. Heat the oil and 10g of the butter in a medium frying pan. Add the chopped onions, season with salt and pepper and sauté for 6-8 minutes until soft and glossy. Stir though the St Matthew hot sauce, then the corn and finally the cream cheese/sour cream. Add the macaroni and mix together, making sure it’s evenly distributed and coated.

  4. Melt the 70g of butter in a saucepan, then stir in the flour. Cook, stirring constantly, for at least 1 minute over a medium heat. Lower the heat then slowly whisk in the milk, a little at a time, so that it doesn’t lump. Once all the milk is in, increase the heat to medium and continue whisking until it thickens. Remove from the heat and stir through the cheeses until they have melted.

  5. Melt the 30g butter in a small pan and add the panko crumb, stirring so it soaks up all butter. Mix through the parsley. Take off the heat before it starts to golden.

  6. Pour the cheesy sauce over the macaroni, and with a spatula gently distribute it through the macaroni. Sprinkle over the crumb topping, and place into the middle of the oven for 20-25 minutes.

  7. Dish out hot, straight from the oven.
