Saint Nicholas Christmas Tartlets

With our new St. Nicholas on the scene, just in time for Christmas, what better way to celebrate the season with these delicious morsels that would be a highlight to any festive table, or to get the party started.
Ingredients
- 2 sheets puff pastry
- 1 egg, whisked with 1 Tbsp water
- ½ brie wheel
- ½ blue cheese
- ¼ apple
- ¼ red onion
- 2 strips Prosciutto
- 6 half walnuts
- St Nicholas - Cranberry Cherry Chilli Jam
- sprigs of thyme & rosemary
Directions
Thaw the pastry and preheat your oven 180°C/160°C(fan). Lightly grease, or oil spray two 12 hole mini muffin tin. Cut the pastry sheets into 24 squares, 5.5x5.5cm. Gently press each square into the muffin holes. Brush the pastry with the egg/water wash.
Cut the brie and blue cheese into 12 small 1cm wedges, each cheese. Put the cheeses into the pastry cups, brie in 12, blue cheese in 12.
Chop a quarter of the apple into extremely thin slices and then into half semi- circles. Very finely slice the red onion into short strips. Slice the Prosciutto into strips.
Working so you have 4 different flavour combinations, add strips of the Prosciutto (without overfilling) to 6 of the brie cups and 6 of the blue cheese cups. Add apple slices and a half walnut to 6 of the blue cheese cups and onion slices to the last 6 brie cups.
Place a ¼ teaspoon of St Nicholas Cranberry, Cherry, Chilli jam on top of all 24 cups, and small sprigs of thyme and rosemary leaves on whichever you wish to.
Place in the middle of the oven and bake for 15-18 minutes, or until the pastry has puffed up and they are golden brown. Rest out of the oven for 5 minutes and serve while still warm.
Or you make a few days ahead, store in an airtight Tupperware, and reheat at 100°C for 10-12 minutes.
