Oven Baked Spicy Mango Cauliflower Wings with Saint John
Ingredients
1 Head of Cauliflower
1 1/2 Cups White Flour
½ Cup Milk
Salt & Pepper
1/2 Tsp Garlic Powder
1/2 Tsp Smoked Paprika
Sauce:
1 Tsp Olive Oil
6 Tbsp of Saint John - Mango Turmeric & Ginger
Method
Serves 4 as a snack
Preheat the oven on fan forced 200°C.
Remove the bottom of the cauliflower and break off bite-sized florets. If they’re too big, cut them from the base and use your hands to pull them apart, this makes less mess and stops them from breaking apart during cooking.
In a large mixing bowl, sift flour, spices and a pinch of salt and pepper and whisk in the milk. The consistency should be like a pancake batter.
Drop in your florets and roll them in the batter so they are completely covered.
Place the wings on a lined baking tray spaced evenly so they’re not touching, then place them in the oven. Bake until golden before flipping the wings to the opposite side.
Once golden on both sides remove from the oven and turn heat up to high.
Whisk together olive oil and St. John and baste the wings with your sauce, then return to the oven keeping a good eye on them so as not to burn them.
Once crispy and delicious, remove from the heat and serve immediately with a yoghurt dressing.
