These tasty morsels are easy to whip up and roll into our new Kawakawa & Feijoa Za’atar.
Our new spice range certainly makes these cheesy little biscuits (and other recipes) extra special.
Keep them in an air tight container just waiting to impress any impromptu guest, pair with cheese, Membrillo or chutney, and a glass of wine (or two).
Ingredients

100g plain flour
- 40g cornflour
- Pinch of sea salt
- 80g cold butter
- 80g Tasty cheese
- 2-3 Tbsp Kawakawa & Feijoa Za’atar
Directions
Shift the flours into a large bowl and add the salt. Grate the butter into the flours and using your hands rub it in until it starts to resemble bread crumbs. Grate in the cheese and add 1 tablespoon of cold water to bring the dough together, kneading it into a ball.
Tip the dough out onto a clean surface and roll it into a log, about 3½ cm in diameter and 22cm long. Wrap in baking paper or cling film and chill for 1-2 hours in the fridge or 30 minutes in the freezer.
When ready to bake, preheat the oven to 180°C (fan) and line a large baking tray with baking paper.
Sprinkle a long rectangle plate with the za’atar, remove the biscuit log from the fridge or freezer and roll it in the Kawakawa & Feijoa Za’atar so that it is evenly coated and sticking.
Slice the log into about 20-22, 1cm thick, discs and lay on the lined baking tray with a small gap in between each.
Bake in the middle of the oven for 10-12 minutes, until lightly golden. Remove from the oven and allow to completely cool on a wire rack before storing in an airtight container. Can be stored for up to 2 weeks.
