Ingredients

120g flour

pinch of salt

2 eggs

140ml milk
-
1 Tbsp canola oil
-
40g caster sugar
-
2 large ripe bananas
-
oil for deep frying

Icing sugar

St Valentine Lavender & Rosemary Hot Honey

Directions
Sift the flour into a bowl, add the salt and whisk in one whole egg and the yolk of the other. Gradually pour in the milk, while whisking, until all is combined without any lumps. Whisk in the oil and the sugar and refrigerate for 30 minutes.
Whisk the egg white until it’s white and peaky, then very gently fold it into the batter using a metal spoon. Peel and diagonally cut the banana’s into 5cm chunks.
Heat up the oil to 190°C. Once the oil is at heat, dip the banana chunks into the batter, and in batches, deep fry them for about 2 minutes until crispy and golden on the outside. Scoop onto paper towel and lightly sift over some icing sugar.
Serve warm with a scoop of vanilla ice-cream and a generous drizzle of St Valentine hot honey.
