Baked Halloumi with St Valentine Hot Honey

Ingredients

  • 1-2 x 200g halloumi blocks

  • 2 Tbsp olive oil

  • sprigs of thyme or marjoram

  • freshly ground black pepper

  • 2-3 Tablespoons St Valentine Hot Honey

Directions

  1. Preheat the oven to 160ยฐC fan.

  2. Score the halloumi blocks in a criss-cross pattern without cutting all the way through. Rub each with good quality olive oil, making sure it seeps into the cuts. Place in a snug oven-proof dish and wedge a few thyme sprigs into the cracks.

  3. Bake in the oven, on a rack 2/3rds the way up, for 6 minutes, then turn the grill on your oven to high and brown the top for a further 8-10 minutes until nicely coloured on top. Carefully drain off any excess liquid.

  4. Serve straight from the oven with a good drizzle of hot honey over the top of each block, a few fresh leaves of thyme or marjoram, and some crusty baguette bread to mop it all up.
