Fish Tacos with Saint Peter

Our Kiwifruit & Kawakawa Verde Sauce adds a wonderful tang to these super easy fish tacos. Perfect for a quick family dinner and you can add in any extra salad ingredients depending on what's in the fridge.

Ingredients

Corn tortillas
2 fillets of white fish
Olive oil
1 cup cubed pineapple
1 red or yellow capsicum, chopped
¼ red onion, diced
1 handful of fresh coriander, chopped
Saint Peter – Kiwifruit & Kawakawa Verde
Salt & pepper
2 Tbsp cornflour
Lettuce
Pickled red onion

 

Method

In a skillet on medium heat add a splash of oil then toss in your pineapple, chopped capsicum & diced red onion. Cook until onion has become translucent and pineapple starts to caramelize, then set aside to cool completely. Once cool add chopped coriander and a tablespoon of Saint Peter – Kiwifruit & Kawakawa Verde.

Meanwhile, cut your fish into bite sized pieces. Whisk together cornflour, salt and pepper and toss the fish through making sure each piece is evenly covered.

Return your skillet to high heat, add olive oil. Remove fish from the flour and dust off any excess. Gently fry until it becomes opaque – only a few minutes per side depending on how thick the pieces are.

Warm the tortillas either in the microwave or directly over flame.

Assemble your tacos with lettuce, capsicum mix and fish. Top with pickled red onion and an extra splash of Saint Peter – Kiwifruit & Kawakawa Verde to your taste.
